What is a block of duck foie gras?
Foie gras is the liver of specially fattened geese or ducks which is used as a table delicacy, most notably in the form of a paste (pâté de foie gras).

Foie gras can be enjoyed in many ways (French people often like to make their own foie gras terrine for special occasions like Christmas). The block of foie gras is worked into a thin paste. It is simply emulsified duck foie gras, blended with a seasoning. Pieces of lobe from the foies gras can also be added. This will be mentioned in the name of the product (eg block of duck foie gras with pieces or “morceaux”). These “morceaux” will then be clearly visible when cutting foies gras.
The best duck foie gras blocks are made simply with emulsified foie gras, salt and pepper and contain no preservatives, artificial colors or flavors.
There are as many options as there are brands of duck foie gras. Some people like their duck foie gras in its natural state, while others like it seasoned with Armagnac or white wine, for example.
