Three homemade recipes using confit duck gizzards

1. Gourmet Salad with Confit Duck Gizzards

Ingredients:

  • 390 g of Label Rouge confit duck gizzards
  • 150 g of green salad (lamb's lettuce, arugula, or mesclun)
  • 100 g of cherry tomatoes
  • 50 g of nuts
  • 2 tablespoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 shallot, chopped
  • Salt and pepper

Preparation :

  1. Gently heat the gizzards in a pan without adding any fat.
  2. Meanwhile, wash and spin the salad. Cut the cherry tomatoes in half.
  3. Place the salad in a salad bowl, add the nuts (if you want to grind them and sprinkle them on top, that's also an excellent option), the tomatoes and the shallot.
  4. Add the warm gizzards on top.
  5. Season with salt, pepper, balsamic vinegar, and olive oil.
  6.  Mix and serve immediately.

2. Pizza with Confit Duck Gizzards and Goat Cheese

Preparation time : 20 minutes

Difficulty : Medium

Ingredients :

  • 1 pizza dough (you can make it to your taste) or buy a good quality one at the supermarket)
  • 300 g of Label Rouge confit duck gizzards
  • 150 g of goat cheese
  • 100 g of arugula
  • 1 sliced red onion
  • 2 tablespoons of crème fraîche
  • 1 tablespoon of honey
  • Black pepper

Preparation :

  1. Preheat the oven to 200°C.
  2. Roll out the pizza dough onto a baking sheet.
  3. Spread the crème fraîche on the dough and add the sliced gizzards, the arugula and the red onion.
  4. Arrange the slices of goat cheese and drizzle with honey, lightly.
  5. Season with pepper and bake for 12 to 15 minutes, until the pizza is nicely golden.
  6. Serve hot.

3. Sautéed Potatoes with Confit Duck Gizzards

Preparation time : 25 minutes

  1. Peel and cut the potatoes into cubes. Cook them in a pan with a little duck fat for 15 to 20 minutes until they are golden.
  2. Add the gizzards cut into pieces and sauté everything for 5 minutes.
  3. Incorporate the garlic and parsley, mix well and serve hot.
