Preparing your own foie gras is a pleasure for every amateur… or professional cook. Foie gras is the star of appetizers in all French gourmet restaurants, whether in a terrine or pan-fried. We offer a premium frozen foie gras (1st choice), ready to be cooked (deveined).

This is a raw foie gras, which you must cook by pan-frying or preparing it in a terrine. It is frozen to facilitate transport and allow for better preservation (you can keep it for 1 year in the freezer before cooking), and a few days in the refrigerator.

To defrost a whole raw foie gras, simply place it in the refrigerator in its plastic bag and leave it there for 12 hours for a slow defrost, or you can always use your microwave on the defrost setting. Then, you will prepare and cook it exactly like fresh foie gras. 

What is deveined duck foie gras?

Deveined foie gras is raw foie gras from which the main veins have been removed, a process that can only be done by hand and is delicate to perform. This preparation makes it easier to prepare, saving you time.

Advantages of deveining:

  • Avoid imperfections in the finished product.
  • Save time in preparation.
  • Ensures a tasting without fibrous pieces. 

The "1st choice": A guarantee of quality

"First choice foie gras" refers to a high-quality liver, carefully selected according to strict criteria:

Aspect : Whole liver, without visible hematomas, with a uniform color.

Weight: Generally between 450 and 600 grams, a guarantee of optimal maturity. A duck foie gras of about 500g is the ideal weight.

Texture : Firm yet soft to the touch.

These criteria make it a product favored by chefs and discerning enthusiasts.

How to cook your raw foie gras? 

There are many ways to cook raw duck foie gras, the three most common being steaming, baking in a water bath, and pan-frying. But there are others, such as cooking in a cloth, cooking in salt... 

You can find numerous recipes on the internet and let your imagination run wild by pairing foie gras with many sauces or products (foie gras pairs very well with fruits for delicious sweet and savory flavors).

If we want to keep it simple, there are two types of preparation for raw foie gras:

Cold chain

At Foie Gras Gourmet, we use express carriers (DHL, Fedex, etc.) to deliver frozen foie gras to you as quickly as possible. Furthermore, we use packaging that helps maintain the product at low temperatures. However, we cannot guarantee the cold chain 100% during transit; that is why we recommend checking that the raw foie gras is properly frozen upon receipt and not refreezing it if there are signs of thawing. When in doubt, we suggest keeping it in the refrigerator and consuming it quickly after receipt.
